Nutrient Dense Granola

This is a tasty nutrient-dense snack that you can make for yourself at home or make for someone battling cancer.

This is one of my favorites and was a delicious snacking treat when I was fighting leukemia. I didn’t have an appetite and I was nauseous, but I knew I needed nutrients. This is a tasty nutrient-dense snack that you can make for yourself at home or make for someone battling cancer. This recipe is excellent. You can customize it to your liking and add more toppings.

Ingredients

  • 4 1/2 cups rolled oats (not quick-cooking)
  • 1 1/3 cups flaked coconut (unsweetened)
  • 1 heaping cup of sliced almonds
  • 1 heaping cup of raw unsalted sunflower seeds
  • 3/4 cup coarsely chopped raw almonds, whole raw almonds, or any other nuts you love!
  • 1-2 Tbsp. or more coconut sugar, monk fruit sugar, or date sweetener
  • 1/3 cup coconut oil, liquid (warm in a pan to melt), or 1/3 cup grapeseed oil
  • 1 cup brown rice syrup (can also use 1/2 maple syrup, 1/2 brown rice syrup)
  • 1/3 cup water
  • 1 Tbsp. alcohol-free vanilla extract

Optional items to consider adding AFTER you cook the granola:

  • 1/3 cup of dried cranberries or dried cherries
  • 1/3 cup of dried apricots
  • 1/3 cup of golden raisins
  • 1/3 cup of carob chips or stevia-sweetened chips

Cooking Instructions

  • Preheat oven to 325 degrees.
  • Mix dry ingredients in a bowl.
  • Melt coconut oil in a saucepan and whisk in syrup, water, and vanilla.
  • Stir wet ingredients into dry until combined.
  • Spread mixture evenly on a cookie sheet with sides. Bake for 10 minutes at 325 degrees, then stir and then bake for 10 minutes more. Stir every ten minutes until golden brown (2-3 times, most likely).
  • Let cool on cookie sheet
  • Once cool, break apart into chunks and mix in optional items.
